Pumpkin Cake with Cider Caramel Sauce

This is such a yummy fall cake! I found the recipe in a magazine and had to try it. I love pumpkin cookies and thought that this should be in my kitchen, too. Hope you like it!

Pumpkin Cake with Cider Caramel Sauce
1 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
3/4 c. oil
1 (15 oz) can pumpkin
2 eggs
Combine the first 6 ingredients. Add oil, pumpkin and eggs. Whisk until blended. Pour into a greased 9x13 pan. Bake at 325 for 30 minutes. Cool and top with the sauce before serving.

Cider Caramel Sauce
1/2 c. brown sugar
1 Tbsp. cornstarch
2/3 c. apple cider
2 Tbsp. heavy cream
1 Tbsp. butter
salt to taste
In a saucepan, whisk brown sugar and cornstarch. Add cider and stir in the cream, butter and salt. Cook over med-hi heat, whisking constantly, until large bubbles form around the edge of the saucepan, about 3 minutes. Reduce heat to low and allow to thicken, about 2 minutes. Top with vanilla ice cream if you want and drizzle sauce over it.

  6. This was so so good! I made it for dessert for Thanksgiving and it was such a hit! I became aware of the recipe because it was posted on Mommyskitchen.net, and I am so glad to have found your page as well!
I love to bake and try new things, next I will be trying the chocolate croissants! :)
Just a note that I needed to bake my cake for more like 40 minutes, but the recipe was so easy to put together and like I said, a huge hit served warm with vanilla ice cream. Thanks!

  10. I printed this recipe from your site last year and I never got the chance to make it. Seeing this again has been a great reminder that I need to! If you would like, we're having a link party called Seasonal Inspiration Saturday - it would fit in perfect!

  13. Ok, so I just made this. It's good but I don't think I let the sauce cook enough. I ended up adding some Karo because i didn't have cream and I think it made the sauce thicken too quickly. Anywho, the sauce burned my eyes when i was pouring it over the cake LOL. Is that normal?? You can REALLY taste the vinegar too, it's strong.

  21. I think I'm going to make this! It's pumpkin puree right? not the pumpkin pie filling?

  22. I just made this, but it doesn't look quite like yours. It is still yummy. I was wondering if you are supposed to use Pumpkin Pie filling or Pure pumpkin? Maybe that is the difference in the way it looks? I used Pure Pumpkin. Thanks!

  23. Mine didn't turn out like the photo--it was very dense and would not bake in the middle. The sauce is good, though! I'll make pumpkin bread instead.
