Chocolate Caramel Bars

Heavenly. Rich. Addicting. That's how I describe these bars. Because Oh.My.Caramel-y Goodness. They are rich and so I can only handle one of these, even though I would love more. They are just as good, if not better the next day. I am sorry for sharing this recipe as I am sure more than one of you will curse me when you make them. I curse my mother for these. Even though I am making them right now.


Chocolate Caramel Bars
Crust:
1 1/2 c. flour
1 1/2 c. brown sugar
1 1/2 c. oats
1 c. plus 2 Tbsp. soft butter

Mix all together and press half of the mixture into the bottom of a 9x13 pan and bake at 350 for 10-15 minutes. Remove from the oven and pour 1 bag of chocolate chips over hot crust. Pour 1 bottle of caramel ice cream topping over the chocolate chips.


Top with remaining crust. Just sprinkle it over the caramel. Return to the oven and bake 10-15 minutes more. Watch it to make sure it doesn't overcook.

Those are so good. We have made those for years in my family. My friend calls them devil bars because they give her headaches. They are worth it though.

Okay...I may not be able to make these for Thanksgiving (because I don't have the caramel sauce (and I'm not driving back to the grocery store....it's a madhouse today!) but I will be making these sometime during the Holidays! They look wonderful! I bet these would be a nice neighbor gift for Christmas! Thank you for sharing this recipe!

These look really good and easy. Quick question, does it matter what kind of oats? I have the Old Fashioned. Will they work or do you use the Quick Cooking? Thanks.

Susan- I used quick, but I am sure you could use old fashioned as well. Enjoy this treat!

I have made these for years but I melt 64 carmels with 10 tbls milk and then I spread chopped pecans over the melted carmel, Anyway they are wonderful.

Ok....I made these but must have done something wrong. My crust was smooth when I mixed everything together....did I mix it too much?

Kristy-try using cold butter instead and see if that helps. Just mix it with a pastry cutter or fork. It's not a dough, rather a crumbly topping. The bottom layer you press down, but the topping just gets sprinkled over top.

Oh Mandy - shame on you for being such a temptress like this. =) I ADORE this combo of flavors...am pinning them until I find an excuse to make them...and will be sure to take them somewhere so I don't devour them all...little by little, of course.
