
Casseroles are my friends. They are usually made up of a bunch of yummy stuff all put together and baked. The ones I love best have cheese. Lots and lots of cheese. This dish does not disappoint. I'm sure it will be on your make again (and again) list. It comes from Southern Plate and oh.my.goodness. She has so many wonderful southern dishes. You really can't go wrong with her recipes. I totally love this dish!
1 Box Yellow Rice (I used Zatarain's)
1/2 C. Margarine or butter, softened
1 Can Cream Of Chicken Soup
1-2 C. shredded, cooked chicken
1 can Whole Kernel Corn (drained)
1 1/2 C. Cheddar Cheese
Cook rice according to package directions. Add rice and all other ingredients, except for 1/2 C of cheese, into a bowl and stir until well combined. Spoon into casserole dish and top with remaining cheese. Bake at 350 for about thirty minutes, or until bubbly.
Just look at all that cheese!

ReplyDeleteThis looks so-o-o-o good! Your printed recipe says you used Zatarain's Rice. The only yellow rice I saw at the store today from Zatarain's looks like it has red & green peppers in it. Is this the kind of rice you used? Thanks!
ReplyDeleteCindi, yes that is the kind I used. Sorry!As long as it says "Yellow Rice" then that's it. There is also a Mexican version in a yellow foil looking bag.

ReplyDeleteI am making this recipe tonight, but was unclear as to what to do with the butter. Do I melt it and add it to the mix, or let it soften and add it in? I left it out this time because I wasn't sure what to do. Hopefully it will still be good. Thanks for sharing!
ReplyDeleteKathryn- it says to mix the rice with "all other ingredients" which includes the butter. Hopefully your turns out, if not try it again with the butter mixed in. It's worth it!

ReplyDelete:) I gathered that I was supposed to add the butter to the other ingredients, but my question was how. Do I need to soften the butter or melt it first? It was fine without it, but I'd like to try it with it. I hope I wasn't asking a stupid question...just wondered if I needed to do something to the butter before adding it.
ReplyDeleteLol Kathryn...Just a stick of softened butter or margarine and stir it in. I better go fix that, sorry!
ReplyDeleteOh yummy yum! I have a question though. If you make the rice, and then cook it for 30 minutes in the oven, won't it turn out too mushy and a little weird?
